C.I.E.H Award in Managing Food Safety in Catering Level 4

A five day course designed
for middle management and senior staff who have responsibility for the
management of food hygiene and food safety. It is also suitable for staff
hygiene trainers and potential trainers.
Successful completion of this course
will provide trainers with a qualification which meets one of the Institution's
criteria for tutors seeking approval to run the Level 2 Award in Food Safety in Catering course
The course normally runs for one day
per week for five weeks followed by a half day for the examination. Candidates
must be prepared to undertake assignments in their own time. These assignments
form part of the course assessment.
The qualification covers the following
topics:
- Bacteriology
- Food Poisoning and Food Borne Disease
- Non-bacterial Food Poisoning
- Physical Contamination
- Food Storage and Temperature Control
- Food Preservation
- Design of Equipment
- Cleaning and Disinfection
- Pest Control
- Personal hygiene
- Education and training of food handlers
- Legislation
- Management Control Techniques
Candidates are assessed on the basis of two course assignments and a 2 1/2 hour
written paper. The final pass mark is 60%. Those who gain a mark of 80% or more
are awarded a credit certificate.

Level 3 Award in Supervising Food Safety in Catering or similar Suggested progression on completion: C.I.E.H. HACCP in Practice certificate
