C.I.E.H Food Safety in catering
Level 2

This 1 day course teaches the importance
of the foundations of good food safety and is an accredited by the Chartered
Institute of Environmental Health and Royal Institute of Public Health
qualification.
This qualification will benefit anyone
working in where food is prepared, cooked and served. Suitable for pubs, hotels,
restaurants, care homes, schools, volunteers, fast-food outlets, contract
catering, contract caterers, etc.
The qualification covers the following
topics:
- Legislation
- Food safety hazards
- Temperature control
- Refrigeration, chilling and cold holding
- Cooking, hot handling and reheating of foods
- Food handling
- Principles of safe food storage
- Cleaning
- Food premises and equipment
Short objective test of either two 15
multiple choice question papers or one 30 question multiple choice question
paper
